Grandma made her brownies from scratch--no box mixes for her. These brownies are very moist and chocolaty, the perfect comfort food. She would often make several pans at once--coconut for my mom, walnuts for my uncle, chocolate chips for my daughter, and raisins for me.
-4 squares of bakers chocolate
-2/3 cup butter
-2 cups sugar
-1 teaspoon vanilla
-4 eggs
-1 1/2 cups flour
-1 teaspoon baking powder
-1 teaspoon salt
-1/2 cup nuts, coconut, raisins, chocolate chips, caramel chips, chopped maraschino cherries or anything else you can think of as going well with brownies
In a glass measuring cup, melt the chocolate and butter in the microwave, and pour into a mixing bowl. Beat in the sugar, vanilla and the eggs--one egg at a time. Stir in the flour, baking powder and salt, then fold in the nuts or whatever you've decided to add. Pour in an 8x10 greased rectangular pan or 2 greased round pans and bake for 25 minutes at 350 degrees. I use the 2 round pans when making two different varieties and then I just add the raisins or chocolate chips into the pan after I poured the batter and kind of stir them in. Grandma did that too.
