This three ingredient pineapple cake recipe is so simple, I almost didn't put it up, thinking it was too easy. This recipe is ready in a snap and it looks like you put a lot of effort into it. You're family will love it and so will guests. It's also made with ingredients we typically have in our pantry so, when you're pinched for time, or you get that surprise visit from relatives, you'll be ready for them.
-1 angel food cake mix
-1 can crushed pineapple (20 ounce)
-whipping cream
Really, these are the only ingredients you will need. Don’t follow the instructions for the cake mix, just pour it into a large mixing bowl. Add the entire can of pineapple, juice and all, and beat with our mixer until it's well blended.
Pour the batter into a 9x13 cake pan and bake for 30 minutes at 350 degrees. When the cake is cooled, and you're ready to serve it, add whipped cream to top it off.
And if you don't have whipping cream, but you do have a can of fruit preserves, you can warm the fruit preserves and pour them over the top of the cake when you serve it--my personal favorite is strawberry. The strawberries go really well with pineapple. You can also use fresh strawberries and mash them into a sauce, add a little sugar and that will work as well.
I think this is the easiest dessert I have ever been able to throw together at a moments notice.
