Pumpkin Cupcakes



These yummy pumpkin cupcakes came from one of my co-workers and they are sinfully delicious! I didn't change a thing to the recipe and it is a great way to use the pumpkin from your pumpkin carving!

-3/4 cup oleo, melted
-1 cup sugar
-2 eggs
-1 1/2 cup sifted flour
-1 cup shredded pumpkin
-1 teaspoon baking soda
-1/4 teaspoon salt
-1 1/2 teaspoons cinnamon
-1 teaspoon baking powder

Preheat oven to 375 degrees. Mix oleo, sugar, eggs and pumpkin in a large bowl. Add the remaining ingredients and blend well. Bake in cupcake tins for about 15 minutes. Frost with butter cream frosting. Makes about 18 cupcakes.
