Spicy Grilled Chicken



This spicy grilled chicken is perfect for your family's main meat. It has a great flavor but it's not too spicy for the kids. You can save the leftovers to top off your salads. Just cut it up cold and pile on top. It also makes great chicken tacos or fajitas. As you can see in my photo, I made it with my daughter's favorite buttered noodles.

This chicken is really easy to put together and I give you tips for getting the most juice out of your limes.

-1 pound chicken breast tenders
-2 tablespoons fresh lime juice (1 small lime)
-2 tablespoons olive oil
-1/2-1 teaspoon minced garlic (I use less when cooking for people who are sensitive to garlic)
-1 teaspoon chili powder
-1/2 teaspoon ground cumin
-1/2 teaspoon dried oregano
-1/8 teaspoon salt
-a few sprinkles of pepper

To get the most juice from your lime, microwave it on high for 30 seconds (it will be hot so use a hot pad or towel to pick it up). Roll it on your counter top with the palm of your hand. Place the towel between the lime and your hand if it is too hot to handle. Cut it open and squeeze until you get your 2 tablespoons of juice (or use a juicer).

Put all the ingredients directly into a resealable plastic gallon bag. Seal the bag and shake it so everything is well mixed and the chicken is well coated with seasoning. Marinade for about 10 minutes while you go light your grill.

Place the chicken on the grill and cook over a medium flame for 5 minutes. Turn the chicken over and cook another 6 minutes. Remove from the grill and serve it up....
