Sweet Potatoes with marshmallows are my mom's favorite. I personally, like them
spicy with curry, but there are never any leftovers of this sweet dish. It's more like a dessert than a vegetable.
-1 large can sweet potatoes (or yams), approximately 24 ounces
-1/2 cup brown sugar, packed
-1/2 cup maple syrup
-1 package tiny marshmallows
Put all your ingredients, except the marshmallows, in an oven safe casserole dish. Mash it all together until well blended and there are no chunks of sweet potatoes. Spread out a layer of marshmallows on top of the sweet potatoes and pop them in the oven at 350 degrees for 30 minutes (or until the marshmallows are browned).
